Spicy pepperoni penne pasta

DIRECTIONS

  1. In a blender, mix carrot and garlic.
  2. Add tomatoes with their juices, 2 tbsp Horio Classic olive oil, ¼ tsp salt, ¼ tsp pepper and mix well.
  3. Transfer mixture in a pot and simmer for 20-25 minutes.
  4. In the meantime, cook pasta according to package directions.
  5. Drain and return to pot.
  6. While pasta is cooking, heat 1 tbsp Horio Classic olive oil in a pot over medium fire. Add pepperoni and stir until brown, for 3-4 minutes. Add peppers and anchovy (optionally) and mix.
  7. Drizzle sauce over pasta, mix and serve.
