Do you still believe that legumes are boring? Well, they go into every recipe, main course, side dish and salad, and apart from making our daily and weekly menu more interesting, they also make it very nutritious!
Lentils, beans, chickpeas, split peas. Thin lentils, thick, lima beans, PDO beans, chickpeas, fava beans with onions over freshly baked bread…Pulses are certainly in many of our favorite traditional and more contemporary dishes, accompanied by a slice of feta cheese, french fries and fresh bread.
They are the protagonists of the Mediterranean diet, a pure nutritional treasure: proteins, carbohydrates, fiber, potassium, calcium, iron, vitamins, flavonoids are found in each dish of pulses and therefore classified as super foods.
Choosing to boil in plain water (and making sure to change the water, soaking them beforehand and skimming them as they boil) and add in salad without excess olive oil and artificial sauces, we can enjoy their light version. Consuming legumes two to three times a week is necessary!
