Savory muffins with spinach, Horio goat cheese and prosciutto

INGREDIENTS

6 large eggs ½ cup milk ¾ cup grated Horio goat cheese 140gr wilted and chopped baby spinach ½ cup roasted red pepper in cubes 57gr prosciutto in long thin slices ¼ tsp salt 1/8 tsp black pepper

DIRECTIONS

  1. Preheat oven at 175 C.
  2. Butter a 12-muffin-tin.
  3. In a big bowl mix eggs, milk, ¼ tsp salt and 1/8 tsp black pepper.
  4. Add Horio goat cheese, spinach and pepper.
  5. Equally divide mixture in 12 spots, put prosciutto on top and bake for 20-25 minutes, until thick in their centre.
  6. Remove from oven, let cool on a rack for 5 minutes and remove from tin.
  7. Serve warm.
