INGREDIENTS 6 large eggs ½ cup milk ¾ cup grated Horio goat cheese 140gr wilted and chopped baby spinach ½ cup roasted red pepper in cubes 57gr prosciutto in long thin slices ¼ tsp salt 1/8 tsp black pepper
- Preheat oven at 175 C.
- Butter a 12-muffin-tin.
- In a big bowl mix eggs, milk, ¼ tsp salt and 1/8 tsp black pepper.
- Add Horio goat cheese, spinach and pepper.
- Equally divide mixture in 12 spots, put prosciutto on top and bake for 20-25 minutes, until thick in their centre.
- Remove from oven, let cool on a rack for 5 minutes and remove from tin.
- Serve warm.
