Banana-walnut & raisin muffin


200 gr brown sugar with molasses 3 pureed bananas 200 gr Horio Organic Cow Butter, melted, at room temperature 2 eggs 300 gr soft flour 15 gr baking powder 5 gr powdered cinnamon 3 gr salt 50 ml black rum 50 gr black raisins 80 gr chopped walnuts (Horio Organic Cow Butter and flour are needed to prepare the baking pan)


  1. Stir flour, baking powder, cinnamon and salt in a bowl
  2. Beat the eggs in a mixer at high speed
  3. Using a spatula “push” the egg mixture into the center of the bowl and slowly add the flour/baking powder/cinnamon/salt mixture into the bowl, beating it with the mixer at a low speed
  4. Stop the mixer and add the rum, raisins and walnuts and mix well using a spatula
  5. Sprinkle flour into the muffin pan and using a spoon, add the mixture to each individual space (a little bit over half way)
  6. Bake in a preheated oven at 180° C for 20 minutes
  7. Take out of the oven and let them cool off, then flip them over a grill and allow the muffins to cool off completely
