INGREDIENTS 3 large peeled ripe tomatoes 1 green pepper cut into thin slices 1 small cucumber with the peel shaped into rings 1 sliced onion, in round slices 24 Horio Organic Kalamata olives 1 cup chopped parsley 2 tblsp chopped mint 1 tblsp capers 150 gr Horio light white cheese, cut into cubes Plenty of Horio organic extra virgin olive oil TOP White Vinegar Salt
- In a large bowl add the tomato wedges; add the slices of pepper, onion and cucumber and stir.
- Add the olives, the capers, the mint and the parsley. Drizzle with olive oil and vinegar.
- Add salt and stir well.
- Just before serving add the cubes of Horio light white cheese.
