Fresh salad with Horio light white cheese


3 large peeled ripe tomatoes 1 green pepper cut into thin slices 1 small cucumber with the peel shaped into rings 1 sliced onion, in round slices 24 Horio Organic Kalamata olives 1 cup chopped parsley 2 tblsp chopped mint 1 tblsp capers 150 gr Horio light white cheese, cut into cubes Plenty of Horio organic extra virgin olive oil TOP White Vinegar Salt


  1. In a large bowl add the tomato wedges; add the slices of pepper, onion and cucumber and stir.
  2. Add the olives, the capers, the mint and the parsley. Drizzle with olive oil and vinegar.
  3. Add salt and stir well.
  4. Just before serving add the cubes of Horio light white cheese.
