Fried zucchini with eggs


2 medium sized zucchini 2 eggs oregano Horio Classic olive oil for frying salt and pepper


  1. Clean and rinse the zucchini.
  2. Cut them in small cubes.
  3. In a frying pan, heat Horio Classic olive oil, add the zucchini and cook until browned. Add salt, pepper and some oregano.
  4. In a bowl, whisk the eggs and add them in the pan.
  5. Stir until the eggs get thickened.
