INGREDIENTS 2 medium sized zucchini 2 eggs oregano Horio Classic olive oil for frying salt and pepper
- Clean and rinse the zucchini.
- Cut them in small cubes.
- In a frying pan, heat Horio Classic olive oil, add the zucchini and cook until browned. Add salt, pepper and some oregano.
- In a bowl, whisk the eggs and add them in the pan.
- Stir until the eggs get thickened.
