Marinated baked goat
When garlic, herbs, wine and Horio extra virgin olive oil were cooked with goat in an oven, a great recipe was born! And it’s really delicious!
Marinated baked goat


1 kilo lean boneless goat meat ½ cup white wine 2 cloves of garlic 2 tblsp rosemary 1 tblsp oregano 3 tblsp Horio mountain regions extra virgin olive oil zest of ½ lemon salt and pepper


  1. Cut the meat in 4 portions, rinse it and put it in a deep bowl.
  2. Sprinkle it with salt, pepper, rosemary, oregano, the chopped garlic, the wine, the juice and the lemon zest, and mix them.
  3. Cover the bowl with a membrane and put it in the fridge for about 5 -6 hours. Periodically stir the meat.
  4. Put the meat and its marinade in a baking tray. Add Horio mountain regions extra virgin olive oil and cook in the oven, on high heat, for about 40 – 45 minutes, until well roasted.

If needed, add water to the baking tray while the meat is being cooked. We don’t want the sauce to evaporate completely.
