Oven Baked Vegetable Omelette


6 eggs 300 gr crumbled Horio Feta cheese 300 gr sliced mushrooms 2 leeks (only the white part) in thin, round slices 2 chopped green peppers 100 gr corn ½ cup milk 4.5 tblsp Horio Extra Virgin Olive Oil Koroneiki Variety 2 tblsp chopped basil salt, pepper


  1. Preheat the oven at 180 degrees. With ½ tblsp Olive Oil grease a baking pan.
  2. Pour 4 tblsp of olive oil into a frying pan and sauté the leeks, mushrooms, peppers and corn for 6-7 minutes
  3. Beat the eggs in a bowl with the feta and the milk; add salt, pepper and basil and empty into the baking pan
  4. Add the sautéed vegetables and bake for 20 minutes until golden brown
