This pumpkin soup combines everything: low fat, rich flavor, tradition, as made from yellow pumpkin, raisins and Horio sustainable olive oil. Enjoy!
Pumpkin soup with rice and raisins


1 yellow squash 1 onion ½ cup of Horio sustainable olive oil 1-2 kilos ripe tomatoes ½ cup Zante black raisins


  1. Clean the squash and cut into small pieces, chop the onion and grate the tomatoes.
  2. Pour some water in a pot, Horio sustainable olive oil, the squash, the onion, the tomatoes and the raisins, and boil for about 20 minutes.
  3. Add rice, salt and pepper and boil for 10 more minutes.
