Saganaki with shrimp and Horio feta cheese

INGREDIENTS

1 kg large shrimp 300 gr Horio feta cheese ¾ cup chopped tomato ¾ cup tomato juice 1 cup Horio PDO Kalamata olive oil 1 grated small onion 1 tsp freshly grated pepper Salt 1 cup chopped parsley for decoration use

DIRECTIONS

An extremely light recipe with never-ending deliciousness

  1. Armed with patience, clean the shrimps’ shells, while keeping the heads and the tails intact. Lay them on a baking sheet in the oven.
  2. In a saucepan sauté the chopped tomatoes, the tomato juice, the onion and the olive oil.
  3. Add salt and pepper and wait until the sauce is reduced to ¼.
  4. Pour the remaining sauce over the shrimp into the baking sheet.
  5. Chop the Horio feta cheese into small pieces and place them among the shrimp.
  6. Cover the baking sheet with foil and bake in the oven for about 45 minutes at 200 degrees.
  7. Serve the Saganaki with shrimp and Horio feta cheese on a platter and sprinkle the chopped parsley.
